Bottling Somos Cabernet Franc

We spent all of Australia day bottling one of the new releases for this year: Cab Franc from McLaren Vale. Philosophy for that one is quite straight forward, we wanted to do something fragrant, typically leafy, juicy and smashing.
Picked relatively early for the Vale, inoculated with non-sacc yeast and we just let it do its thing. Pressed early to keep it soft and bright, into old oak, large format.
No fining or filtering, just one racking post malo. Bottling after 9 or so months in oak, gravity filler, hand corked, and hand boxed. Will be hand waxed and hand labelled soon! Stay tuned for labels!
